HUMMUS NACHOS
Hummus nachos? You heard us right! Our spin on nachos makes for an easy appetizer for a date night in, but can also feed a crowd or be a whole meal by itself.
For this recipe, we have subbed out the traditional corn tortilla chip in favour of homemade pita chips and included hummus in place of salsa. These two substitutions help keep this dish substantial, without adding meat as a topping.
Nothing beats a fun appetizer that offers something for everyone to eat – from vegetarians to meat eaters. You can also make this dish vegan by substituting vegan cheese!
INGREDIENTS
- Pita cut into triangle pieces
- Olive oil
- Salt
- Paprika
- Spicy Black Bean Happy Dance Hummus
- Shredded mozzarella
- Nacho toppings of your choice! We like to use:
- Sliced black olives
- Cucumbers
- Feta
- Sundried tomatoes
- Banana peppers
- Roasted chickpeas
- Parsley
- Green onion
INSTRUCTIONS

Preheat the oven to 400°F. Place your triangle pieces of pita on a baking sheet and brush lightly on both sides with olive oil. Sprinkle salt and paprika on the slices to season, and bake for 10 minutes or until the pita slices start to crisp up.

While you wait for your homemade pita chips to be ready, slice your nacho toppings. When the chips are ready, arrange them on a large platter, leaving room for a small bowl in the centre of the dish.

Sprinkle the mozzarella on the chips, and place the dish back in the oven for roughly five minutes so that the cheese melts.

Generously spread out your toppings over the pita chips – the more toppings, the better!
