EASY VEGAN MAYO RECIPE WITH AQUAFABA POWDER - CREAMY AND EGG-FREE

Ingredients:

  • 1 ½ teaspoons Faba Aquafaba Powder
  • 3 tablespoons water
  • 1 teaspoon Dijon mustard
  • 1 teaspoon white vinegar or lemon juice
  • ½ teaspoon salt
  • 1 cup neutral oil (like avocado, grapeseed, sunflower or canola oil)

Instructions:

  1. In a mixing bowl or a tall container, combine the Faba Aquafaba Powder with water. Whisk or use a handheld immersion blender until the mixture is fully dissolved and slightly foamy.
  2. Add the Dijon mustard, vinegar (or lemon juice), and salt. Whisk together until combined.
  3. Slowly drizzle in the oil while blending with an immersion blender (or whisk vigorously). Keep blending until the mixture emulsifies and reaches a creamy mayo-like consistency.
  4. Taste and adjust seasoning if needed. For a tangier mayo, add more vinegar or lemon juice.
  5. Store in an airtight container in the fridge for up to one week.

 

Pro Tip:
For a flavour twist, add minced garlic, a pinch of smoked paprika, or fresh herbs like dill or parsley during step 2.
